For some odd reason (on CentOS) When I hit the default page for my Apache installation, it reverts to http://*servername*/apache2-default. How do I remove this appended extension?

There are ways to point the default to a different locale, but depending on what you want to accomplish, this may not be the best way to go about it. Typically, the Apache default page is only seen if the server is reached on a vhost which is unconfigured or doesn't have a document root. In other words, if you create a vhost for your domain (or an IP-based vhost if it's a dedicated server aith a static address), apache will serve that instead.
