I am building my first custom-computer and are using these components:
    - Intel i7 920 D0
    - Asus P6T SE Motherboard
    - Sapphire Ati Radeon 4870 512MB (Or 1Gb, will this make a difference?)
    - Corsair XMS3 1333MHz DDR3 6GB
    - Antec 300 Case
    - Western Digital Hard-drive (Around 500Gb- 1TB and either Caviar Blue or Black)

I am deciding which Power Supply to go with:
    Corsair 750W TX
    Corsair 750W HX
    Corsair 850W TX
    Corsair 850W HX
Or any others you can recommend.

Will 750W be enough and is modular going to be essential. Are there any down sides to modular and how can I help cable management if I choose a TX model?

Have you been here - Welcome to Corsair :: Power Supplies ?

According to their calculator you are aiming WAY to high. But, if you can afford it... why not. It will certainly future proof your system.

I can strongly recommend Enermax. Had mine for years and so far not one tiny power issue....

    That brand is too expensive.
Try CoolerMaster , I have it and its good. Try a cooler master eXtreme 650W, you dont need 700+
