You can use XP's File and Settings Transfer Wizard and a crossover cable, or just copy the contents you want over on to the new hard drive.
You can connect it along with the original hard drive inside the computer Your hard drive will appear in explorer under "My Computer" you can just search through the files you want, then literally drag n' drop them wherever you please onto a different explorer window if you want certain files
