Sli

Comparing SLI and Single video card systems, you can see average 30% performance increase when you use SLI.

Personally I wouldn't recommend using SLI, because:

1) It's expensive
2) Big power consumption
3) Much heat
4) Adds not as much as you would hope

SLI is for you if you have an older system and you would like to increase performance of your PC in gaming without buying a new PC. Otherwise - it's waste of money.

Depends on your gaming habits, which games you play, and at what resolution. Also, you MUST have a motherboard with an nVidia SLI-supporting chipset for this to be an option. If you're playing Quake 3 at 1024x768, SLI is a complete waste of money.
However, if you're wanting to play Crysis at 1600x1200 with the detail cranked up, then SLI would very well be worth the money.

1600x1200 resolution on high detail wouldn't stop doing it's good job even on 8800 GTS 640 MB version.

2900 XT would do it even better. I can't see those 30 FPS on 1600x1200. Only on 1900x1620.
