Hi
Would like to setup desktop virtualization for demonstration purposes, thinking to use three workstation user, management and server hosting vm's. I have not yet experienced the actual setup so not sure what things i need to make this work.
appreciate your input in advance.

Depending on your budget, I can advise to use either VirtualBox (free for non-commercial use, limited features) or VMWARE Workstation (not free, many features). Just make sure you have enough RAM in your system.
